I'm sorry, but no one can answer that right now but Electronic Arts, and they haven't spoken yet.
Whether it was a case of EA changing their mind at the last minute, or some kind of miscommunication bewteen various EA offices around the world isn't clear either. I'm saying that because the source of the Demo release date could be expected to be a credible one: www.electronic-arts.de (in German only) At the time of writing this - Oct.4th, German time - the news message, saying literally that the NFS6 demo will appear on the official Need For Speed Hot Pursuit 2 Website on October 2, has not been rectified or otherwise updated.
I'm also explaining this to make clear that sites like NFSWorld.org cannot be blamed for publishing this news, because EA themselves were the first to go public with it. In this newsarticle, the NFSworld.org editors explain thet the situation is as much a mystery to them as it is to everyone else.
I guess all we can do right now is wait, and listen to the enthusiastic reports from the console gamers. ;)
Update: new screenshots for Xbox and Gamecube have been added to needforspeed.com.
Meanwhile, http://www.electronic-arts.de appears to have been taken off the air as I type this. Fancy that.
Oh, and there's an interesting interview with the producer of NFS: HP2 for the PC at Ingaming.com, along with five new screenshots.
Update 2 (Oct 6th): Electronic-arts.de is back online, but the newspost with the demo announcement has been removed. That's why the link above is dead.
The EA source of NfsWorld.org has confirmed that there still will be a PC demo before the game itself is in the shops, but could not say when exactly.
