Night!
Check this web: https://gf.wiretarget.com/nfs_pu.htm
Maybe will help. Sadly to say, all my files of P2000 is gone. But i might to wonder by the brains, whats cause your crash. Let me try;
    Local hardware: issue (Sli? Crossfire?)
Windows register (settings): issue (Sli? Crossfire?) you can change gpu register volues using RivaTuner for Sli, or Ati Tray Tools v1.7.9.1573 for crossfire (to disable). Maybe other filters do have issues. / Also, for example, if you are using sound setups with "3d" or dolby surround filters for example it might crash. I have no idea:

You may want to try an free Windows software for emulation OS. Or try all compatibilities for exe file.
Also you might search (or ask people) to thouse who knowing an windows shortcuts commands: d:\nfs2000\nfs.exe -d3d0 or ...-d3d1 (im not sure... but in High Stakes it was worked).

Other silly idea is to try an "3D-Analyze v2.36b" (or a newer or an older versions). I might guess this (program) can fix-things up in exe file. I might try to explore the "mip (or mipmap)" -filters on,off. Something i has in memories. Or anyother option. If you get success, you'll be able to figue out what is wrong.

Check "regedit" (by Run) for installed settings of the game trough register, which EA programers coded. It might contain the "lines" which you can remove completely if you see them wrong (i dont have them here). You able to post an screenshot like that:
https://drive.google.com/file/d/1QxcjRyY0TIX7SK2bYHJ8K43Dx1yTP2LD/view?usp=sharing
It can be located by the adress [HKEY_LOCAL_MACHINE\SOFTWARE\Wow6432Node\...
if you are using 64bit Windows.

And the last thing is - game options?

Hey PPLd and welcome to the forum.

Since you said...

Graphics look stunning now and everything seemed to work perfect.. until I start buying cars in Evolution mode.

... i assume your game is up and running.

So the issue is, that after patching you have a 100% completed game, but you want to progress through the game on your own, right?
Hm, good question.
Well, you need to make a new driver profile on game startup. Then Evolution and Factory modes are reset.
I think, unfortunately you will loose all the fixes that came within the savegame...

The Essentials Pack (http://www.nfscars.net/need-for-speed-porsche-unleashed/3/files/view/11514/) does come with a savegame (named "Player").
Is this the completed profile you are using, PPLd?
Actually I assumed Essentials Pack has a "virgin" savegame, just with all fixes implemented (at least thats what i understand from the description stating "5. A clean savegame with all the fixes applied.") - can't test this myself right now, though.

I really want to play this game with a wheel. I have Thrustmaster RGT FFB and Logitech DFGT.
Farthest I came was getting it to work with Xbox 360 gamepad. But it's no good anyway, always around 3s slower times than with keyboard.
Option 1 is to plug the mouse and keyboard into USB3.
Option 2, better one, is to install porsche.sdb from Complete Patch.

But none works with all 3 of my wheels and Xbox One controller.
It recognizes analog inputs under control settings, but once you get to play, only digital inputs work.

Second problem is that it is very time consuming to set all the inputs, as the game starts to lag like hell.

Then I thought to try other Windows. I now have Windows 10 64-bit. Others that would be good to try:
-Windows 98: wheel won't work, as you can only get Windows 7-10 drivers:
http://ts.thrustmaster.com/download/accessories/pc/unified_drivers/Package_2017_FFD_1_Release-Notes.txt
Maybe Logitech ones, it says Windows XP (or older):
https://support.logitech.com/en_us/product/driving-force-gt/downloads

-Windows XP: probably the worst choice, as I remember you needed the XP patch and also the LOD patch.
Or I could just use the Complete Patch (nGlide), but I don't know if it is made for XP.

-Windows 7: according to PCGW, USB3 fix is only necessary for Windows 8 onwards:
https://pcgamingwiki.com/wiki/Need_for_Speed:_Porsche_Unleashed#Analog_inputs_do_not_function_on_newer_versions_of_Windows
So this should be the best version, probably 32-bit.
